Hello everyone! Today I am coming at you with a quick Thanksgiving treat tutorial! It seems like everyone has totally forgotten about Thanksgiving and jumped right into Christmas, but I think that Thanksgiving deserves a little bit of attention, right? Who else loves Pumpkin Pie? I know I do! I can’t believe pumpkin season is almost gone! I love how these Mini Turkey Shaped Pumpkin Pie Bites turned out! They would be the perfect treat for you to bring along with you to your Thanksgiving feast! Kids and adults will love them! Not to mention, they are super delicious!
Pie Crust Ingredients! (You could also use a store bought pie crust)
*makes 24 Turkey Pumpkin Pie Bites
- 2 1/2 cups flour
- 1/4 tsp salt
- 3 TBS sugar
- 12 TBS butter (cold and cut into cubes)
- 1/4 cup shortening
- 1/4 cup ice water
- 1 egg (for brushing over the top, before going in the oven)
Whisk flour, salt and sugar lightly together then add in your butter and shortening and combine with a pastry blender until you have a crumbly mixture. Once your mixture is crumbly add in your ice water ONE TABLESPOON at a time and mix until you have a dough consistency. If you are having a hard time get your hands in there and use them to incorporate everything. Roll out dough in between two pieces of parchment paper until about 1/4 or 1/8th of an inch thick.
Pumpkin Pie Filling
- 1 c. pumpkin puree
- ½ c. heavy cream
- 1 egg
- ¼ c. brown sugar
- 3 tbsp. granulated sugar
- 1 tsp. pumpkin pie spice
- ½ tsp. ground cinnamon
- ¼ tsp. kosher sea salt
- ½ tsp. vanilla extract
Add all ingredients into a bowl and mix until combined!
- Mini muffin tin
- 3 inch flower cookie cutter
- Eye Sprinkles
- Candy Cane Sprinkles (turkey gobble)
- Rainbow chips (yellow for beak)
- Orange fish shaped sprinkles (feet)
I found all my sprinkles at Michaels!
Taking the flower cookie cutter, cut out some pie crust flowers. Press one flower into the bottom of each well in the muffin tin. Make sure that it goes all the way down to the bottom and fan out the petals on the edge. Cut two of the petals off of each flower. Fill each flower with the pumpkin pie filling. Using remaining pie crust, shape a turkey head (small oval shape), with the pie crust and place it on top of the filling. Brush one beaten egg over the pie crust to make sure that it gets golden brown in the oven. Bake at 350 degrees for about 18 minutes or until the pie crust is golden brown. Once cooled add the eyes, gobble, beak and feet to each Turkey with a toothpick and some corn syrup or frosting. That’s it!
